Summer is here, which means healthier, lighter eating. These tasty, simple salad recipes are perfect for a cookout or family picnic all summer long.
Quinoa Salad
Ingredients
1 package arugula
1 cup cooked quinoa
1 can drained, rinsed chickpeas
1 cup sun-dried tomatoes (not in oil)
¾ cup low-fat crumbled feta cheese
½ cup toasted pine nuts
Directions
Drizzle with your favorite champagne or balsamic vinaigrette dressing.
Harvest Salad
Ingredients
1 (10-oz.) package of mixed greens/baby lettuces
1 apple, diced into bite-sized pieces
1 pear, diced into bite-sized pieces
1 cup red grapes
¼ cup dried cranberries
¼ cup goat cheese
½ cup walnuts, cut into small pieces
Directions
Drizzle with your favorite low-fat balsamic or raspberry vinaigrette dressing.
Fruit and Granola Salad
Ingredients
1 bag spring mix or arugula greens,
cut up with kitchen scissors
½–¾ cup strawberries, cut up
1–2 handfuls blueberries
10 grapes, cut in half
½ mango, cut into small pieces
Any of the following in small pieces:
apples, pears, nectarines, peaches, plums
1–2 handfuls sliced almonds
2 cups fat-free pecan raspberry
vinaigrette
2 tablespoons white balsamic vinegar
1–2 tablespoons granola
2 tablespoons Truvia (optional)
Shredded grated cheese or fat-free feta
(optional)

Mix all ingredients in a large bowl and chill for 2 hours before serving.
